Bayu Prawiro, the 2nd place winner of the World Brewers
Cup 2025 and Indonesia Brewers Cup Champion, presents a
signature brewing concept inspired by the “Exposure
Triangle” in photography. He translates this into the
“Extraction Triangle”: a careful balance of agitation, flow rate,
and contact time.
Using gentle agitation and a slow flow rate, he maximizes
flavor without harshness. Utilizing tools like the Hario Switch
and Sibarist fast filter, he’s able to control the brew for a
longer, consistent extraction.
For this special blend, Bayu curated three coffees, each
chosen to highlight a unique attribute in the final cup,
composed of:
* 70% Panama Finca Sophia (Washed Geisha)
* 20% Panama Janson Lot 622 (Anaerobic Natural
Geisha)
* 10% Indonesia Sukawangi Excelsa
Each coffee is ground separately to enhance its role in the
cup. The result: mandarin orange, red apple, grapes, and
jasmine tea in perfect harmony.
