Karana Global is a boutique producer and processor of specialty coffee green beans with a special focus on Bali, developing quality Arabica and Robusta products from the coffee plantations of Kintamani and Tabanan. Their processsing facility is located in Banjar Juga in Mas Village, Central Ubud. Embedded in traditional village life, they control quality from the farm to the finished product. Karana trains and employs local people contributing annually to projects centered on community education and the environment. This anaerobic natural lot coffee exemplifies a precise anaerobic fermentation technique, whereby meticulously selected coffee cherries are subjected to a controlled oxygen-deprived environment during processing. This unique process, under specific temperature and humidity conditions, triggers biochemical reactions within the coffee beans, leading to the development of complex flavor compounds and aromatic precursors. This results in a cup profile distinguished by intensified fruity and floral notes, as well as a refined acidity.
