Description
Flying Pumas is located in the Chiriquí mountains of Panama. The farm is committed to environmentally respectful coffee cultivation and sustainable practices.
The FOX lot is located along an ecological corridor that runs through the farm. The plot is divided between secondary forest and an area being restored from former cattle use. It has mixed shade, valley topography, and proximity to a seasonal stream. The area is also a biodiversity hotspot where foxes have been observed.
The coffee undergoes a natural anaerobic process. The coffee cherries are harvested at 100% ripeness and fermented in special bags at temperatures between 14°C and 28°C.
After fermentation, the coffee is washed to remove impurities. The coffee is then slowly dried on the patio.
For the drying stage, the coffee is transported from 1,750 MASL to the Creativa Coffee District drying patios, located at 300 MASL. After drying, the coffee undergoes climate stabilization to reduce metabolic activity and is stabilized in storage for 2 months.
